Fettucine with Bacon & Peas Recipe
From Wendy, of Papatoetoe
This is my family’s favourite recipe. It always gets an excited “yum” or “yippee”. I like it because it’s a quick and easy meal when time is short. And it uses ingredients from different groups of the food pyramid.
Ingredients
For 4 servings:
- 4 rashers of bacon
- 1 C frozen peas
- 1/2 C boiling water
- 1/2 C cream
- 1-2 tspn chicken stock
- Half a packet of dried fettucine
Method
1. Cook fettucine in boiling water.
2. Cook bacon in frying pan; when cool, chop into pieces or slices.
3. Dissolve chicken stock in boiling water and add cream.
4. When fettucine is cooked, drain and add to pan with bacon, peas and cream mixture.
5. Cook for a few minutes, stirring all the time, until liquid has evaporated a little.
Serve immediately in pasta bowls with bread rolls. Top with freshly ground pepper and parmesan cheese if desired.
Hint: for littlies, to make it easier to eat, I cut the fettucine into shorter strips with kitchen scissors once served.
