Russian Slice Dessert Recipe

Everyone loves this and asks for it time and time again. It is so easy to make - one pot and then into the oven! Be careful not to over cook or it will go dry.
Ingredients
For 12 slices:
- 150g butter
- 150g sugar
- 1 tablespoon Golden Syrup
- 1 egg
- 1 teaspoon baking powder
- 1 cup sultanas
- 250g flour
- 1/2 teaspoon vanilla essence
Method
1. Melt butter, sugar and Golden Syrup together in a pot.
2. Allow to cool (I sit in a sink of cold water), then beat 1 egg in to cooled ingredients.
3. Add baking powder, sultanas, flour and vanilla essence and mix together.
4. Bake in swiss roll tin (I use a lasagna dish) for approx 25 minutes at 180°C.
5. Ice with lemon icing while warm.
