Chicken Divan Recipe

This is my version on a super yum 'Chicken Divan' recipe that has been passed all around our family
Ingredients
For 4-6 servings:
- 1 whole cooked chicken (Roast one yourself, or I cheat and just buy a cooked one from the supermarket - speeds up the cooking time!)
- 1 large head of broccoli
- 1 teaspoon of lemon juice
- 1 heaped teaspoon of curry powder
- 1 can of condensed chicken soup
- 3 large tablespoons of mayonnaise
- 250g packet of creme fraiche (or some supermarkets only have the 200g tub which is fine to use)
- 200g of mature cheddar
- 4 slices of bread and 50g butter (to make breadcrumbs or you can just use pre-made ones if thats easier)
Method
1. Pre-heat oven to 180°C.
2. Cut broccoli up into chunky size pieces and place in a pot of water to boil for approx 10 minutes or until quite soft.
3. Remove all meat off the chicken and cut, or shread, into chunky pieces.
4. Once broccoli is cooked, drain and create a layer in a medium sized casserole style dish with a bit of depth.
5. Place all the chicken pieces on top of the layer of broccoli. This creates your second layer.
6. Now to make the sauce for your third layer: in a big bowl combine the condensed chicken soup, creme fraiche, lemon juice, mayonnaise and curry powder. Stir well. Pour the sauce all over chicken.
7. Grate the cheese and sprinkle over the top.
8. Create your final layer which is the breadcrumbs. Either make them yourself by placing 4 torn up pieces of bread into a blender with 50g of butter until all mixed and crumbly; or use pre-made breadcrumbs.
9. Place your layer of breadcrumbs on top to finish!
10. Bake for approx 30mins.
Serve with cooked vegetables on the side and some fresh bread.
