Chocolate Rocky Road Recipe
By Simon Holst
Chocolate lovers – you don’t even have to cook this treat, simply melt the chocolate and add the goodies. It's kid-friendly too - the tough part is waiting for it to set!
Ingredients
For 15-20 servings:
- 375g packet of Nestlé Dark or Milk Melts
- 1-2tsp Kremelta
- 200g marshmallows
- 1 cup of popped popcorn
- ½ cup of chopped dried apricots or glace cherries (or a mixture of both)
Method
1. Line an 18cm x 28cm brownie tin with baking paper (for a deeper slice, use a smaller tin).
2. Place the Melts in a large microwave dish or glass bowl. Microwave on medium (50 per cent) power for 3 to 4 minutes stirring every 30 seconds until melted (or melt over hot water as per the instructions on the packet). Add 1 teaspoon Kremelta and stir until melted. If this doesn’t seem to make the chocolate runnier, add the second teaspoonful and stir again.
3. Add marshmallows, popcorn and dried fruit to the melted chocolate and stir gently to combine. Carefully tip the mixture into the prepared tin and spread to a roughly uniform depth. The mixture doesn’t need to fill the tin completely – uneven edges are part of the charm!
4. Refrigerate until cold, then cut into serving-sized pieces.
